For the meatloaf:

  • 1.5 pounds lean ground beef, 80/20 or better
  • 1 cup milk
  • 4 to 6 slices wheat bread, torn into pieces
  • 2 large eggs
  • 1/4 cup diced onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon ground sage

For the sauce:

  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 1 teaspoon yellow mustard
  • 1 teaspoon worcestershire sauce

Prepare the meatloaf mixture

    In a mixing bowl, whisk together eggs and milk. Add in salt, pepper, sage, and diced onion.

    Tear slices of wheat bread into bite-size pieces. You will need enough to soak up most of the liquid, usually 4 to 6 slices. The mixture should still be fairly wet.

    Using clean hands, add ground beef and work together ingredients until combined. Form a loaf in a greased baking dish or loaf pan.

    Bake at 350°F uncovered for 1 hour. Drain off any grease and spread sauce mixture over top. Return to the oven for an additional 15 to 20 minutes.

    Slice and serve hot, with a side of mashed potatoes and green beans. Excellent leftover and reheated!

A simple meatloaf recipe, seasoned with just salt, pepper, sage, and onion. Loved even by Rob Rippy, who claimed that he didn’t like meatloaf. He just hadn’t had “Mom’s Meatloaf.”

Mom used to tell the story that our Grandma Audrey loved this meatloaf recipe so much, that she shared it with everyone in her retirement community down in Florida. It’s the sauce! The brown sugar and mustard in the sauce elevates it just a bit above plain ketchup. When mom would visit Audrey, she was known as “the one with the meatloaf recipe.”
