- 3 cloves garlic, minced
- 1 pound raw shrimp (peeled & deveined)
- 1 13 oz. package smoked turkey sausage – halved & sliced
- 1 medium sweet onion – diced
- 1 red bell pepper – diced
- 1 green bell pepper – diced
- 1 medium zucchini – halved & sliced
- 1 medium yellow squash – halved & sliced
- 1 tablespoon Italian seasoning blend
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground cumin
- 2 tablespoons tomato paste
- 1/2 cup chicken broth
- salt & pepper to taste

If using frozen shrimp, place in a bowl of warm water to thaw. Slice and dice sausage and vegetables while the shrimp thaws.

In a large skillet, heat 1 tbsp. olive oil over medium heat. Sauté minced garlic with thawed shrimp until shrimp is just cooked, around 5 minutes. Transfer shrimp to a plate.

Sauté onions in olive oil until tender. Add bell peppers and turkey sausage. Cover and cook for about 5 minutes, stirring occasionally. Deglaze the skillet with a bit of chicken broth if veggies or sausage are sticking.

Add the zucchini, yellow squash, along with tomato paste and chicken broth. Stir to combine.

Add all seasonings, stir well. Cook for 5 to 7 minutes until the sauce is thickened and squashes are tender.

Stir in shrimp and cook for another 3 to 5 minutes. Season with salt and pepper to taste.
If not adhering to a Paleo diet, serve over cooked rice or pasta for a hearty meal.
